Abstract

Objective: To compare the postprandial glycemia after the intake of proteins and the intake of a carbohydrate pattern by doing the tests every 30 minutes for two hours. The participants, 16 healthy students in the physiology laboratory of the University of Medical Sciences, on March 8, 2018, between 7:00 am and 9:00 am. Subjects were fasted for 10 - 14 hours, fasting blood glucose was measured, then glycemia was measured at 30 minute intervals for the first two postprandial hours. Of the 16 students, 6 consumed only carbohydrates (standard) and 10 consumed carbohydrates and proteins (experimental). There is no significant change in the experimental results in blood glucose concentration or glycemic peak time. The maximum blood glucose concentration occurs at 30 minutes postprandial in both cases, with an average of 139.2 mg / dL and 134.9 mg / dL for the standard and experimental subjects, respectively. The study shows that there is no significant change in postprandial glycemia due to the intake of protein and carbohydrates.
