Abstract

Celiac disease is a multisystem immune enteropathy triggered by the exposure of gluten in the diets of genetically predisposed individuals. It is characterized by a variable combination of gluten-dependent clinical manifestations, including malabsorption syndrome, minor presentations, and silent celiac

disease. The prevalence of this disease has been increasing in recent decades, affecting all age groups, this due to the increase in the consumption of grain-based food and due to exposure to environmental factors (viral or bacterial infections, type of delivery, pattern of lactation.) Patients with this predisposition may present high morbidity if they do not have an optimal diagnosis and treatment. Despite being a chronic condition, if an early diagnosis is made through specific serologies and the establishment of a gluten-free diet, the disappearance of symptoms and the normalization of the intestinal mucosa are achieved.
